I had the rare opportunity to hostess a Girls’ Night in my home for some of my closest friends recently, and this recipe turned out so wonderfully that I just had to share. I think these Strawberry Jam Puff Pastries would be just perfect for a morning brunch, or as a sweet treat for any get together. They out looking beautiful and like you picked them up at a local bakery. Would you believe they only required only FOUR ingredients???!!! That’s my kind of baking!

It doesn’t get more simple than that, does it?!
I got my puff pastry out of the freezer about 40 minutes before I needed them. You want to give it time to thaw before trying to make it do anything!
I lined two trays with parchment paper and preheated my oven to 400 degrees. Then, I used a knife to cut the puff pastry into 9 squares. Within each of the squares, I used the tip of the knife to make another small square.
I brushed on melted butter with a pastry brush and quickly sprinkled some sugar on top. I’m thinking adding a tad bit of cinnamon during this step would be really good too!
Next, I plopped a nice teaspoon of strawberry jam on each of the squares. I used the flat side of the spoon to help spread it around a bit.
They went in the oven for 12 minutes, or until they started to brown on top.
After letting these pastries cool for a bit, I whipped up a quick icing to top them with. This is a simple icing my mom has been making for years and is a mixture of confectioner sugar, milk, and a little drop of vanilla. I don’t have any measurements , but rather just mix until I get a consistency I like. (A little milk does go a long way– start with a little and add slowly!)
A quick drizzle of icing on top, and these Strawberry Jam Puff Pastries look good enough to eat!
I’m sure that this recipe could be adapted for a variety of flavors of jam, apple butter, Nutella. Yum. I might have to try them all!
