Warning: I make and share lots of healthy recipes (including those fit for the Whole 30…read about those here or here); this is NOT one of them! I made this recipe up a couple of months ago, and it has become a family favorite. I like that it’s a quick and easy dinner, tastes super yummy, and my kiddos love it.
Last night, as my firefighter husband was working his 24 hour shift, this was our go-to dinner. Sometimes, after teaching high school all day and coming home to be a solo parent, getting a decent dinner on the table for the kids and I is a struggle.
I can hardly even call this a recipe…it’s more of a dump a few things together sort of deal…perfect for a busy weeknight. This recipe happened on accident over the summer. We had been outside all afternoon and my plan had been to make stuffed shells for dinner, but by the time I came inside and remembered the prep time for the shells I knew it would take way too long. I threw some of those ingredients into this “recipe” instead.
Here’s what you need: yup, three ingredients. I typically use the Bob Evans Italian sausage (in the green roll), but today I had this Kroger type and it worked just as well.
Ready for this? Okay…pay attention because it will be over before you know it! First, brown the sausage. In another pot, boil the pasta until done. Then, combine the pasta, sausage, and alfredo sauce. I always add a little water to the empty alfredo jar, shake it up, and pour that in as well. Stir well.
Guess what? Dinner is DONE! Since this isn’t the healthiest option on the planet, I like to serve with a veggie side. Last night we opted for broccoli, and Addy insisted I photograph her dinner bowl.
I really hope you try this recipe soon! It’s definitely a keeper here at our house.
Sausage Alfredo Pasta
1 pound Italian sausage
1 box rotini (I prefer whole wheat)
1 jar alfredo sauce
Cook sausage and pasta according to directions. Drain sausage, then combine all three ingredients. Put a small amount of water in alfredo jar, shake, and add to mixture. Stir well. Enjoy!
