Personal Growth: Stepping out of Comfort Zones

I love motivational quotes.  I love to be inspired, and I love words.  I really love when I find a phrase that speaks to me.  Like today: “A comfort zone is a beautiful place, but nothing ever grows there.”  Sometimes I really need this little reminder.  It’s so EASY to be comfortable.  It’s EASY to avoid change.  It’s easy to ignore the callings in our life, because they require moving out of what feels good, or comfortable. But, do you know what can happen when we do move out of our comfort zone?  Magic can happen.  Results can happen.  Change can happen.  Everything we dream of in our lives can happen, but we have to get uncomfortable first. I’m a creature of habit.  I like routine.  I like knowing what’s coming my way, and I like to have a plan of attack when it arrives.  I don’t like to feel put on the spot, or being the center of attention.  But you know what?  I’ve also learned that in order to grow, I have to …

Pumpkin Chocolate Chip Muffins: The Healthier Way

Even though the weather outside has been feeling anything but fall, my baking tendencies inside the house are screaming FALL IS HERE.  I started with that delicious Fall Harvest Zucchini Bread, and have now worked my way to these tasty Pumpkin Chocolate Chip Muffins. I’ve actually made this recipe two different ways, and today I’m share with you the healthier version of this recipe.  This version omits about 1/3 of the amount of oil and replaces it with apple sauce.  Now, of course these muffins still contain sugar and chocolate chips…but to me the pumpkin and apple sauce give them some redeeming healthy value! Honestly, the difference between these muffins and the original recipe is minimal.  The taste is exactly the same; texture is only slightly different, with this version being a little more dry and cake-like than the full oil version.  (In case you want to try the original recipe, omit the applesauce and use 1 and 1/2 cups of oil instead.)  I made both versions within a week of one another, and had …

Spray it Pretty: The Updated Vanity

Explore Kentucky: Evan’s Orchard

I’ve decided to add a new section to the blog, which I’ve titled Explore.  Expect to find unique experiences, beautiful locations, and little-known places to explore in this section.  As a true Kentucky girl at heart, I decided to start with a hometown spot. Evan’s Orchard is located in Georgetown, Kentucky and it is a must on the fall season to do list in my family.  We discovered this little gem about 4 years ago, when Addy was only a few months old, and have returned for at least one visit a year ever since.  Although fall is the perfect time to visit, Evan’s Orchard is open throughout the spring and summer as well.  I recall one particular summer visit…it was probably the hottest day of the summer, but my kiddos and I and their favorite Aunt Sabrina spent the ENTIRE day there.  Really, we got the first parking spot of the day and then closed them up at night too.  Want to totally wear your kids out?  Let them spend a day at Evan’s …

Finishing Touches- TV Stand

I’ve been reflecting recently and have come to the realization that I fear finishing what I’ve started.  This might sound really silly, but I’ve realized that the perfectionist in me doesn’t like to totally commit to finishing something.  I have found that I’m in the habit of working really hard towards an end goal, sometimes even pushing myself to extremes (spending 8 hours in a day painting in the garage, just to get the last coat on a piece?  building a headboard and painting an accent wall in the same afternoon?).  But, when the finish line is in sight, I stop.  Why, right before I complete the finishing touches, do I put things on hold? I think it’s because I want the outcome to be perfect when complete, so I hold back until I know that I have it completely right.  And to a degree, this is okay and probably a good habit.  The problem arises when I look around, and see lots of almost but not quite finish projects around my house.  Does anyone …

Updated Hutch- Final Reveal!

Drum roll please… I’ve been waiting for this moment for weeks…the hutch I’ve been updating is finally FINISHED!  (If you missed the previews see them here and here.)  This one has been a lot of work, and at moments I wondered if I had perhaps finally bitten off more than I could chew!  I’m pretty sure that this project is the most time-consuming I’ve completed to date, with the exception of our kitchen cabinets. That being said, I’m so glad that I took the time to get this piece RIGHT.  I love the outcome and know that it will make a gorgeous statement piece that it was intended to be. Just as a refresher, here are some pictures of this hutch in it’s original state.  I found it on the online auction website Everything But the House (check it out at www.ebth.com), placed a bid, and won!  I really loved the shape and lines of this piece from the get-go, and knew with a pop of color it could become a show-stopper piece!

Peach Crisp

It seems really late in the season, but our Kroger has been having the biggest, most perfect looking peaches for the past couple of weeks.  I typically cut them up in the morning for my Power Breakfast Bowl (find that recipe here), but yesterday I found myself craving a sweet, baked treat…I blame the chilly, gloomy weather. Because I had these beauties sitting on the counter, I opted to create a Peach Crisp, and man, was it good!  Don’t get me wrong…I LOVE apple crisp…but the peach was really yummy.
